-Winter Minestrone-
I can't think of a better way to finish out January than a warm and comforting bowl of homemade soup while the snow falls. I made this nutrition packed minestrone this week and got rave reviews. I served it with a warm loaf of Hawaiian sweet bread I made in my bread maker. A french baguette would compliment this soup perfectly too.
It's a vegetarian dish too.
You need: Oliver oil, 3 large carrots, 1 onion, 2 cups fresh spinach, large can diced tomatoes, 4 cups vegetable broth, 1 can cannellini beans, 1 can black kidney beans, 1 cup favorite shaped dry pasta, fresh grated parmesan cheese.
Peel and slice carrots, slice the onion and brown in a small amount of olive oil. At this point, you can add a clove of chopped garlic if you desire. Add vegetable broth, canned beans, diced tomatoes and heat on medium for 20 minutes. Add the spinach and pasta and simmer for 10 more minutes. Serve and top with shaved parmesan.
