Serving Up Grilled Flank Steak for Dad

Flank Steak with a Guinness Marinade  (recipe below)

In honor of all the special Dads this weekend, here is one of my favorite poems I'd like to share with you.

Now fire up the grill this Father's Day and prepare this simple steak recipe I found on rachaelray that the man in your life is sure to love. The secret is a marinade using Guinness that adds a little zip to the flavor.  

Flank steak is a great choice for flavor and provides your dish with a tender texture.  To Serve 4, purchase 1 1/2 lbs. flank steak.  Preheat the grill to medium high .  
You will be using 1 can Guinness, 1/3 cup extra virgin olive oil,   (you will need a bit more for brushing), 1 red onion, sliced into rounds, 2 tablespoons flat leaf parsley, 1 1/2 lbs. flank steak at room temperature.

In a bowl, combine Guinness, 1/3 cup extra virgin olive oil, onion and parsley.  Add the steak and marinate in fridge for 30 minutes.  Pat dry and brush with extra virgin olive oil and season with salt and pepper before grilling.  Grill the onion with the steak for extra flavor. 
Grill approximately 8 minutes on each side until your desired doneness.  
I love corn on the cob and baked potatoes with this dish...Don't forget the butter and sour cream!

Grill Your Doughnuts!


 If you are looking for a change from pound cake, grill up some cake doughnuts for a toasty base for ice cream and fruit.  

Preheat your grill to medium high but keep the heat on one side. In a bowl mash 1 pint raspberries with 1 tablespoon lemon juice. Oil the unlit side of the grill and add the 4 cake doughnuts, split horizontally, cut side down.  Cover and grill until the doughnuts begin to brown, usually 1 - 2 minutes.
Divide the doughnut bottoms among 4 plates.  Top each with a scoop of your favorite ice cream, some of the raspberry sauce and a handful of blueberries.  Cover with the doughnut top.  Could there be anything tastier?

This makes 4 servings.  Enjoy!

Rocky Road Grilled Banana Split Anyone?

Rocky road ice cream has always been my number one favorite for years so I jumped for joy when I saw this dessert using all of my favorites!  Fire up the grill.  You are 20 minutes away from awesome.

~Serves 4~
All you need: 4 medium firm unpeeled bananas
1 dark chocolate candy bar with almonds (3 1/2 oz.)
3/4 cup miniature marshmallows
1 quart rocky road ice cream
Whipped cream in a can

Place each banana on a 12 inch square of foil, crimp and shape foil around bananas so they sit flat.
Cut each banana lengthwise about 1/2 inch deep, leaving 1/2 inch uncut at both ends.  Gently pull each banana peel open, forming a pocket.  Finely chop haf of the candy bar.  Fill pockets with chopped chocolate and 1/2 cup marshmallows.
Grill bananas, covered over medium heat for 8-10 minutes or until marshmallows are melted and golden brown. Transfer each banana to a serving plate.
Top with scoops of rocky road ice cream.  Break remaining chocolate into pieces.  Sprinkle chocolate pieces and remaining marshmallows over the tops and garnish with whipped cream (best part!)

Grilled Bacon Wrapped Hot Dogs

If loving bacon is wrong, I don't want to be right!  Found this awesome recipe on Kraft so be sure to share with your family. Fire up the grill and this will make 10 servings:

You need: 

1 chopped tomato
1/4 chopped onions
1 chopped jalapeno pepper (optional)
10 slices bacon (Oscar Mayer is a favorite)
10 hot dog buns
1/4 cup Kraft Real Mayonnaise
1/2 cup ketchup
1 16 oz. package Oscar Mayer hot dogs
1/4 cup yellow mustard

To make:

Heat grill to medium heat.  Combine tomatoes, onions and pepper.  Wrap 1 bacon slice tightly around each hot dog, tucking in ends of bacon slices to secure.  Grill 8-10 minutes or until bacon is done and hot dogs are heated through, turning occasionally.  Drain on paper towels.  

Meanwhile, brush mayo evenly on both sides of buns and grill 1-2 minutes on each side or until lightly toasted on both sides. Fill buns with hot dogs, and top with tomato mixture, ketchup and mustard.  

Serve with corn on the cob and baked beans. Lemonade, anyone?
