Grilling Steak Fajitas Tonight










It's grill time again and this week we're featuring grilled steak fajitas. They are easy to make but require a little prep work. Flank steak is a tougher cut of meat and works well with this dish. Marinade it in a plastic food storage bag in freshly squeezed lime juice for approximately 30 minutes.  

Slice onions and some colorful red and green peppers and place in a bowl. Drizzle with olive oil and lime juice, and sprinkle with garlic powder, salt and pepper.  

Preheat the grill to medium heat. Place the steak directly on the grill and cook for 6-7 minutes on each side. Remove from the heat and let the steak rest for ten minutes while you grill the vegetables in a grill pan, stirring occasionally about 7-10 minutes. 

Cut the steak into strips, place inside the flour tortillas that have been warmed for 3-4 minutes on a 350 oven placed directly on the oven shelf,  and top with sour cream, chopped lettuce, shredded cheddar or pepper jack cheese and salsa. 

Serve it up and dine al fresco tonight. Don't forget the Sangria! Cheers.

Serving Up Grilled Flank Steak for Dad

In honor of all the special Dads this weekend, here is one of my favorite poems I'd like to share with you.

Now fire up the grill this Father's Day and prepare this simple steak recipe I found on rachaelray that the man in your life is sure to love. The secret is a marinade using Guinness that adds a little zip to the flavor.  

Flank steak is a great choice for flavor and provides your dish with a tender texture.  To Serve 4, purchase 1 1/2 lbs. flank steak.  Preheat the grill to medium high .  
You will be using 1 can Guinness, 1/3 cup extra virgin olive oil,   (you will need a bit more for brushing), 1 red onion, sliced into rounds, 2 tablespoons flat leaf parsley, 1 1/2 lbs. flank steak at room temperature.

In a bowl, combine Guinness, 1/3 cup extra virgin olive oil, onion and parsley.  Add the steak and marinate in fridge for 30 minutes.  Pat dry and brush with extra virgin olive oil and season with salt and pepper before grilling.  Grill the onion with the steak for extra flavor. 
Grill approximately 8 minutes on each side until your desired doneness.  
I love corn on the cob and baked potatoes with this dish...Don't forget the butter and sour cream!

Grilled Steaks with Chipotle-Cilantro Butter

Grillig season gets me so fired up about trying new recipes and I saw this one by Australian chef, Curtis Stone that looks incredible.  Give it a try.  It serves 8.
Make Ahead!!  Make and chill the butter for up to 2 days ahead or as a real time saver, make and freeze up to a month in advance.
Ingredients:  1 8 oz. stick butter, room temperature, 2 tablespoons chopped chipotle chiles, 2 tablespoons chopped fresh cilantro, 1 tablespoon tequila (optional), 8 boneless New York strip steaks (8-10 oz. each), freshly ground salt and pepper.
In a small bowl, using a fork, mix together the butter, chiles, cilantro and tequila (if using).  Spoon onto parchment paper.  Using the parchment as an aid, form the butter into a 4-inch long log, roll up tightly.  Refrigerate for at least 2 hours or until firm.
Preheat a grill to medium heat.  Season the steaks with salt and pepper, flip halfway through, about 5 minutes per side for medium-rare.  Transfer the steaks to a platter.  Cut the butter into 8 slices and serve on top of each steak.  Melts in your mouth.
Goes great with fresh corn on the cob sprinkled with fresh lime juice and a tossed Caesar Salad.
