Serving Up Grilled Flank Steak for Dad

In honor of all the special Dads this weekend, here is one of my favorite poems I'd like to share with you.

Now fire up the grill this Father's Day and prepare this simple steak recipe I found on rachaelray that the man in your life is sure to love. The secret is a marinade using Guinness that adds a little zip to the flavor.  

Flank steak is a great choice for flavor and provides your dish with a tender texture.  To Serve 4, purchase 1 1/2 lbs. flank steak.  Preheat the grill to medium high .  
You will be using 1 can Guinness, 1/3 cup extra virgin olive oil,   (you will need a bit more for brushing), 1 red onion, sliced into rounds, 2 tablespoons flat leaf parsley, 1 1/2 lbs. flank steak at room temperature.

In a bowl, combine Guinness, 1/3 cup extra virgin olive oil, onion and parsley.  Add the steak and marinate in fridge for 30 minutes.  Pat dry and brush with extra virgin olive oil and season with salt and pepper before grilling.  Grill the onion with the steak for extra flavor. 
Grill approximately 8 minutes on each side until your desired doneness.  
I love corn on the cob and baked potatoes with this dish...Don't forget the butter and sour cream!

Grill Tuesday: $3.00 Grilled Salad

Sometimes we just tire of grilled burgers and hot dogs, so tonight change it up a notch and make a simple and inepensive Grilled Corn and Black Bean Salad. This recipe serves 4, Prep Time is 15 minutes, and Grill Time is 10 Minutes.

You will need:
4 ears fresh corn, shucked, 3 tablespoons extra virgin oil, 2 tablespoons fresh lime juice, 2 teaspoons chili powder, salt, 2 cans (15 oz. each) black beans, rinsed and drained, 1 bunch fresh radishes, trimmed and thinly sliced, 3 scallions thinly sliced, 1/3 cup chopped cilantro, 1 avocado thinly sliced, 4 ounces queso fresco cheese crumbled

Preheat your grill to medium.  Add the corn and grill until charred in spots, about 10 minutes.  Let the corn cool completely.

In a large bowl, whisk together the extra virgin oil, lime juice, chili powder and 1/2 teaspoon of salt.  Using a large sharp knife, carefully cut the corn kernels fro the cobs and transfer to the bowl.

Add the beans, radishes, scallions and cilantro and toss well.  Divide the salad among 4 plates and top with queso cheese and avocado.  Serve with warm corn muffins or your favorite biscuits with a side of honey butter.
