Easy to Make Coffee Cookies

Are you craving coffee and need a sweet pick me up? Bake up a batch of these delicious coffee cookies in no time.  The extra boost are the espresso chips though you can use regular chocolate chips for equally delicious flavor.  The recipe is below.






Ingredients are simple.
2 sticks (1 cup) salted butter
1 1/4 cup brown sugar
2 large eggs
1 tablespoon extract
3-4 tablespoons espresso powder (I use King Arthur)
2 cups all purpose flour
2 cups old fashioned oats (You can also use quick cook oats)
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups chocolate chips of your choice

Preheat the oven to 350. Line your baking sheets with parchment paper.
Melt the butter in a microwave bowl and remove from microwave.
Stir in the remaining ingredients with a large spoon. 
Using an ice cream scoop, scoop dough onto the baking sheets leaving 2 inches between each cookie.  Gently flatten the dough with your fingers or a spoon. 
Place in the oven to bake for approximately 10 minutes or until the edges are set.  
Remove and place on aluminum foil to cool.  I like to use a fish spatula when baking for easy cookie removal. It slides gently under the cookie and keeps the shape.
My family loved these and I'll be making more for the weekend.
