Quiche Tonight from Leftover Ham



When I cook, my family knows I will always make more food than we can actually eat! When I make a ham, I plan on using it during the week in sandwiches, soups or quiche. Your leftover ham will be delicious in this simple easy to make quiche and using Pillsbury refrigerated pie crusts saves time.  No one will know they aren't homemade. I promise😊

Ingredients are: 
1 cup half and half
4 beaten eggs
3 tablespoons honey mustard
2 tablespoons flour
1/2 teaspoon salt, 1/2 teaspoon dried thyme
shake of pepper
1 1/2 cups cooked and cubed ham
1 1/2 cups shredded Swiss cheese
1 cup frozen chopped spinach, thawed and drained
2 tablespoons grated Parmesan cheese

Preheat your oven to 350 and take 1 pie crust our of the box to warm at room temperature for a few minutes.  In a medium bowl, mix half and half, eggs, mustard, flour, salt, thyme and pepper and beat until well mixed.

Lightly spray a pie pan with cooking spray and lay the pie crust gently in the pan.  Layer the ham, cheese, and spinach in the pie crust. Pour the egg mixture into the pie crust and sprinkle with Parmesan cheese.  Bake at 350 for 40-50 minutes or until the crust is golden and the filling is set.  

Serve, sit down and enjoy tonight!
