Planning Lunch on the Beach, Boat, or Back Yard?



Packing foods for the beach or a long boat ride takes a little planning. There's a variety of choices from which you can select. We keep a couple of collapsible coolers with soft sides at the lake house to use on the boat for our foods and drinks. Easy to transport and keeps our foods fresh for several hours. Always a favorite are peanut butter and jelly sandwiches wrapped in tortillas. Roll them up and wrap individually for easy grab and eat. Be creative with Nutella and bananas for a real treat.  

Assemble a large sub on a hearty bread like french or ciabatta using your favorite deli meats and cheeses. Add a little oil and vinegar, pesto, chopped tomatoes and mustard. Pre slice and wrap tightly.  These will keep in the cooler under frozen ice packs nicely. 

Double your favorite cookie recipe and press into a lightly oiled 13x9 pan sprayed with cooking spray and bake at 350 for 30-40 minutes or until done. Cool and cut into squares for delicious cookie bars.  Perfect for the beach or boat on a summer's day! 

Don't forget plums, grapes, peaches, nectarines!  They are so delicious right now! 

*Helpful tip - grapes are thirst quenching if frozen before serving. Try it on the next hot summer day.
