Sweet Potatoes on the Grill

Check out this Grilled Sweet Potato recipe from Whole Foods .  It's awesome on so many levels. It can be made on the grill in about 12-15 minutes, takes a short time to prepare and it's super healthy.

Ingredients:  

3 tablespoons lime juice
3 tablespoons white wine vinegar
2 tablespoons honey
3 tablespoons fresh cilantro, minced
2 tablespoons mined shallot
1/4 teaspoon ground black pepper
1 1/2 pounds sweet potatoes (1 large or 2 medium) , sliced lengthwise in 1/2 inch thick slices

While the grill is heating for medium heat cooking, whisk together lime juice, vinegar, honey, cilantro, shallot and pepper in a small bowl until blended.

Brush the sweet potatoes on both sides with dressing.  Place sweet potatoes on the grill and cook, covered about 6 minutes on each side or until tender and slightly charred.  Keep an eye on the potatoes to avoid burning.

Serve, sliced in strips and drizzle with remaining ingredients (Serves 4)

    1. They also bake nicely in the oven at 350 for 45 minutes or until done but spray the pan with cooking spray before baking:) Enjoy even on our rainy days....
