Fish Tacos on the Grill

I'm a big fan of fish tacos, going back several years ago having my first Baja fish taco in Arizona at www.rubios.com while on vacation.  I fell in love and have to visit Rubio's each time we are in Arizona.  I found this recipe on www.closetcooking.com.  It's easy and so delicious using such fresh ingredients. This recipe will make 4 servings and total prep and cook time is 40 minutes.

Ingredients:
1 lb. white fish (tilapia or cod), 1 tablespoon oil, 1 lime, juice and zest, 2 tablespoons rum (optional), 1 jalapeno, finely diced, a chopped clove of garlic, 1 handful chopped mint, 1 green onion finely chopped, 1 handful chopped cilantro, 1/2 teaspoon cumin, ground and toasted, salt and pepper to taste, 8 tortillas, 1/2 cup queso fresco or feta cheese, crumbled, 2 cups Strawberry and Avocado Salsa (recipe below), and handful cilantro. *As with any recipe, modify, adjust or eliminate ingredients to your likes and dislikes.

Marinate the fish in the oil, lime juice and zest, rum, jalapeno, garlic, green onion, mint, cumin, and salt and pepper for 10-20 minutes.
Grill the fish over medium high heat until cooked, about 4-6 minutes per side.  The fish will be cooked when it flakes easily and is no longer translucent.
Flake the fish and serve in tortillas garnished with strawberry and avocado salsa, crumbled cheese and cilantro or your favorite taco toppings.

Strawberry and Avocado Salsa

This will make 2 cups and takes 15 minutes to prepare

1 1/4 cups strawberries, cut into small pieces
1/2 cup avocado, cut into small pieces
1 jalapeno, finely diced
1/4 cup red onion, finely diced
1 lime, juice and zest
1 handful chopped cilantro
salt and pepper to taste
Mix together and serve
** Tips to keep fish from sticking to the grill
Brush a high heat oil like grape seed or peanut oil to both sides of the fish and the grate of the grill with a basting brush before placing the fish on the grill.  
Invest in a fish turner spatula.  It's a longer slotted spatula.  OXO Good Grips makes a nice one that's easy to use and inexpensive to buy.  Every griller should have one.
