Love Bruschetta? Grill It!

~Grill  Bruschetta Tonight ~

Here's all you need!

Olive Oil - place in a bowl with a brush ready to apply quickly and evenly to your freshly toasted bread.

Baguette or French Bread - slice thin (1/2 inch) on an angle.  Try to create slices slightly bigger than the tomato slices.  Each slice should be 1-2 bites.

Fresh Basil Leaves - thinly slice across the veins enough Basil to lightly cover each toasted bread slice

Sliced Tomato - Heirloom tomatoes are a great choice.  Squeeze lightly to remove excess juice and seeds and slice thinly.  

Shaved Parmesan (Parmigiano - Reggiano) cheese.  Can also use Asiago cheese

Coarse Salt - Any coarse salt of your choice will add texture and flavor, showing off the great tomato taste

Garlic - Have a number of peeled fresh garlic cloves on hand to lightly rub the toasted bread.  Can use one clove for up to four slices of bread

Assemble on a table near the grill
Grill the bread over a hot fire until toasted with medium grill marks
Rub lightly with garlic
Brush or drizzle with olive oil
Coat the toast with a layer of basil
Add a layer of sliced tomato
Top with shaved cheese
Prior to serving sprinkle a pinch of salt on the top of each piece
Serve and Enjoy!
