Celebrating Earth Day

Earth Day is celebrated each year since 1970 on April 22nd in more than 192 countries.  It is a day in which worldwide support for environmental protection is supported in many ways.  

I found these Earth Day snacks online to make with your kids they will love (& you will too)

Ingredients:  1 cup blueberries cut in half
1 cup green grapes cut in fourths
1 package cream cheese
1/4 teaspoon vanilla (I love thespicehouse)
1 tablespoon sugar
A package of rice cakes (apple cinnamon rice cakes are sweeter)
Mix the sugar, vanilla and cream cheese in a bowl.  Spread the cream cheese onto the rice cake.  
Create the earth by placing the blueberries for the water and the grapes for the land.

Mix up your favorite pancake mix.  Separate into two bowls for two different colors: blue and green.  Use a few drops of food coloring into each and mix it well.  Once your batter is fully mixed, our each into a squeeze bottle. 

On your griddle (low heat) pour the batter into a circle with the blue batter.  Then outline the continents/earth in the green batter.  Cook until the batter is bubbly.  Fill in the continents with the green batter and let it cook.  Gently flip the pancake and let it cook on the other side.  

Good snacks and teaching the kids about the Earth.
