Slow Cooker Tuesday - Pork and Pineapple Tacos

Slow Cooker Shredded Pork & Pineapple

Easy supper for your busy life with minimal ingredients and fun to create your own taco right from the slow cooker.  I made this recipe for my family and the only change I would make to the recipe would be use chunk pineapple instead of the crushed.

This will give you 6 servings and takes just 20 minutes to prepare.  Cook on  low for 7-8 hours in your slow cooker.
Spray slow cooker with cooking spray and place 1 lb. boneless pork roast and 1 package taco seasoning inside.  Cook until pork can be shredded with a fork.  Remove pork to shred with forks and place back inside the slow cooker.  Stir in 1 (8 Ounce) can chunk (or crushed) pineapple and 2 teaspoons lime juice.  Stir and ready to serve.
Suggested toppings:  Sour cream, shredded lettuce, guacamole (store bought or home made), taco sauce, shredded cheddar cheese and chopped tomatoes.  You can offer flour or wheat tortillas or crunch taco shells to fill.  Or try to fill a small bowl with the taco mixture and put your toppings on top for a gluten free choice.
