Have You Tried a Corned Beef Reuben?





My husband is part Irish and corned beef is a seasonal favorite at our house.  Whenever I find a recipe that combines a favorite food with the ease of using my slow cooker, I am all over it.  Check this out. 

Ingredients:  1 corned beef brisket with spice packet (2 - 3 lbs.) 1/2 cup bottled Thousand Island Dressing, 12 Rye or Wheat split rolls (toasted if you prefer), 8 ounces thinly sliced Swiss cheese and Bottled Thousand Island dressing

Trim the fat from the corned beef brisket.  Place the brisket in your slow cooker and sprinkle with the spices from the packet.  Spread drained sauerkraut over the brisket.  Drizzle the 1/2 cup Thousand Island over all.

Cover the slow cooker and cook on low heat for 4 - 6 hours or on high for 2 - 3 hours.

Remove the brisket from the cooker to a cutting board.  Thinly slice the brisket against the grain. 

Spoon the corned beef mixture onto the rolls.  Top each with Swiss cheese and, with additional Thousand Island dressing if you desire.  

*For a shortcut, make your sandwiches using sliced corned beef from the deli counter at your supermarket. It's a huge timesaver and tastes just as delicious. 🍀

Corned Beef a Whole New Way


Here is a new twist to corned beef I know you're going to love when celebrating St. Patrick's Day. Everyone loves a grilled cheese sandwich, but have you ever made a corned beef and cheese grilled cheese? This is a modified version of a recipe I found in Food Network Magazine. 





Gather the following ingredients to get started.

1 1/2 tablespoons unsalted butter ( I'm using Kerrygold)
1 small thinly sliced onion
1 tablespoon sugar
Salt and pepper
3/4 cup dark beer (can be omitted if you prefer)
Deli sliced corned beef you cut into strips
1 tablespoon mustard
1 1/2 cups grated Swiss or Jarlsberg cheese
Rye bread

Melt 1/2 tablespoon butter in a large skillet over medium heat. Add the onion, sprinkle the sugar, and 1/2 teaspoon salt and pepper to taste. Stir for about 10 minutes until the onion has turned golden brown. Remove from the heat and stir the corned beef and mustard into the skillet. 
Divide 1/2 of the cheese between 2 rye bread slices, top with the corned beef mixture and remaining cheese. Top with other bread slice. 
Melt the remaining butter in a large skillet over medium heat.  Add the sandwiches to begin grilling, until the bread is toasted and the cheese is melted. Approximately 4 minutes on each side. Add more butter to the pan if it's needed.  

Serve with your favorite cold beverage or brew and enjoy☘

No Blarney it's Easy Crock Pot Corned Beef and Cabbage

Easy crock pot corned beef and baggage recipe below you put together in minutes!
Place the corned beef in a slow cooker lightly sprayed with non stick cooking spray. Open the packet of seasoning that comes with the corned beef and sprinkle on top before cooking.

Place the potatoes on top of the beef.

Baby carrots placed on top of the potatoes. I cook my corned beef without cabbage, but traditionally you place the cabbage on top on the carrots.  Pour 5 cups of water into the slow cooker, cover and set for 10 hours. 

Aroma packed and delicious Irish soda bread served sliced with butter.
Have you tried Kerry gold Irish butter?  It's sold in most super markets and it adds exceptional creamy flavor.

Whether you were born Irish or are Irish for the day...celebrate St. Patrick's Day with great food, drink, family and friends.  This crock pot recipe gives you a delicious corned beef and cabbage dinner. 
Let the crock pot do the work so you don't have to. We plan to celebrate this coming weekend. How about you?  

Ingredients are:  1 head cabbage cut into 6 wedges, small bag of  baby carrots, 1 corned beef (about 3 pounds) WITH seasoning packet included, 5 cups water, 1/3 cup prepared mustard, 1/3 cup honey. 

Place the corned beef in the bottom of the slow cooker. Place the cabbage into the crock pot with the carrots, a 3 lb. bag of rinsed small red potatoes (skins on) and sprinkle the contents of the seasoning packet on top.  Pour in the water, cover and cook on low for 10 hours.

  Before serving, combine the mustard and honey in a small bowl.  Stir to blend.  Remove the corned beef to a cutting board and slice.  Serve with the vegetables and mustard sauce.    

Irish soda bread is a must to serve with this meal.  You can make your own or buy it fresh from the bakery at your local supermarket as I did.

Toast St. Patrick's Day with a Festive Libation



Whether you're Irish born or Irish for the day, raise a glass and join the global celebration of the Irish culture.  On March 17, we remember Saint Patrick, the Patron Saint of Ireland with gatherings of family and friends.
 Irish coffee has always been a favorite of mine on St. Patrick's Day.  But this year I thought it would be fun to come up with another libation idea for our festivities.  I found these easy, decadent and delicious "Pots of Gold" shots on Celebrations.
 It will make 6 shots and can be served in shot glasses or mini black buckets that will look like a pot of gold after they've been topped with whipped cream and gold sprinkles.

You will need the following:
9 ounces Kahlua
9 ounces Bailey's or O'Mara's Irish Cream
Whipped Cream
Gold sprinkles

Pour one shot (1.5 ounces) of Kahlua into each shot glass.  Top each with another shot of Bailey's or O'Mara's Irish Cream.  Top each with whipped cream and gold sprinkles.  Serve, enjoy and happy weekend!

Celebrate St. Patrick's with Guinness ice cream Floats this weekend

Have a Happy and Safe Saint Patrick's Day

Celebrate St. Patrick's weekend and treat your family and friends with an ice cream float for grown ups made with your favorite Guinness or Stout beer.  

Scoop vanilla ice cream into chilled pint glasses.  Pour in enough beer to cover the ice cream.  

One pint of ice cream and one 12 ounce bottle of beer will make 2 servings:)
