Life is Full of Surprises



Here is a recipe for DIJON PORK CHOPS  I found this week that's easy to make, healthy and delicious.  The combination of mustard, apple and pork make a meal you will love. This recipe yields 4 servings.  

1 1/2-2 lbs. boneless pork chops
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon olive oil
1 tablespoon dijon mustard
2/3 cups apple cider (you can substitute with apple juice)

Place a non stick skillet over medium heat (after spraying lightly with cooking spray). When it's hot, add the oil. Sprinkle the pork chops with salt and pepper and place in the pan.  Cook until lightly brown 7 minutes approximately on each side, depending on thickness of the pork chops.  Transfer the chops to a platter when done cooking.  Add the mustard and apple cider or juice to the skillet,  Bring to a boil.  Pour over the chops and serve.  It's that easy. 
I served them with fresh baked sweet potatoes and green beans.  Add a side of applesauce, homemade or store bought and you have a healthy quick dinner that screams Fall.

**Last week my husband had a trip to the emergency room and ended up being in the hospital for 4 days. Having several tests over the days, it was concluded he had acute pancreatitis.  I'm going on record to say I had no knowledge of what the pancreas does and where it was located.  Needless to say, I have had a crash source in pancreas health 101. I have spent countless hours online researching how to heal and preserve the good health of this vital organ we all have. It was difficult returning home not knowing the source of this painful condition, but I am confident that the diet change I have made in our home is having a positive impact of his recovery. After being married 46 years (this month), I am modifying my cooking and meal preparation in an entirely different way. Very little fat is allowed in the foods I now prepare. Instead I will rely on seasonings and fruits to add flavor. Maple syrup is a good flavor source as well in many of the recipes.

My husband is improving and his pain is diminishing daily. With exercise, daily walks, rest and eating right, my husband will soon return to his weekly tennis league and feel like himself again.
