Grilling Steak Fajitas Tonight










It's grill time again and this week we're featuring grilled steak fajitas. They are easy to make but require a little prep work. Flank steak is a tougher cut of meat and works well with this dish. Marinade it in a plastic food storage bag in freshly squeezed lime juice for approximately 30 minutes.  

Slice onions and some colorful red and green peppers and place in a bowl. Drizzle with olive oil and lime juice, and sprinkle with garlic powder, salt and pepper.  

Preheat the grill to medium heat. Place the steak directly on the grill and cook for 6-7 minutes on each side. Remove from the heat and let the steak rest for ten minutes while you grill the vegetables in a grill pan, stirring occasionally about 7-10 minutes. 

Cut the steak into strips, place inside the flour tortillas that have been warmed for 3-4 minutes on a 350 oven placed directly on the oven shelf,  and top with sour cream, chopped lettuce, shredded cheddar or pepper jack cheese and salsa. 

Serve it up and dine al fresco tonight. Don't forget the Sangria! Cheers.
