Roast Beef in your Slow Cooker




Delicious Beef Pot Roast


I can't sing the praises of slow cookers enough for so many reasons.  You can throw this together easily while you sip your morning coffee and come home tonight to a hot, delicious roast beef dinner.  
Cook on low in your slow cooker for 8-10 hours .

In your slow cooker, toss together the following:
1 pound baby Yukon gold potatoes, 2 cups frozen carrots, 1 large chopped onion, 1 stalk chopped celery, and 1 tablespoon of garlic-herb seasoning.  

Sprinkle both sides of a 3 lb. beef rump roast with 1 packet of onion soup mix on both sides and place the roast on top of the vegetables in the slow cooker with a tablespoon of chopped garlic.

There you have it!  Place the roast when done cooking on a cutting board or platter and let it rest for ten minutes before slicing.  This lets the meat and juices distribute evenly and adds to the wonderful flavor.
