Holiday Week Entertaining

Easy Antiposto Kabobs
Summer is in full swing and if your family is like ours, everyone is working on different schedules.  Our lake house always seems to have guests stopping in or staying over.   It can be somewhat challenging, but organization is the key word.  And a little of "go with the flow" and a glass of wine helps too!  When figuring your menus, keep simple and prepare food you can do ahead of time.  A relaxed host makes for relaxed guests.  I love to make these Antiposto Kabobs because they are easy to eat and prepare and always a popular dish.

Antiposto Kabobs (makes about 60 Kabobs)

You need:  1 9 ounce package of Three Cheese Tortellini, 1 can medium or large pitted black olives, 1 jar green olives, 2 12 oz. containers of marinated mozzarella, 30 slices of salami (cut in half), 1 cup Italian Dressing, 60 skewers.

Place cooked tortellini in a bowl or large gallon freezer bag.  Pour the salad dressing over the top and marinade in the fridge for a few hours.  Drain the pasta.  Place each item onto the skewer.  Can be made ahead and placed in the refrigerator covered until you serve.   Enjoy and have a wonderful weekend.  See you for Grill Tuesday.
