It's Soup Tuesday!
I hope everyone had a fabulous Thanksgiving. Now you are thinking you can't even look at another turkey sandwich using your leftover turkey.

Turkey Tortellini Soup  using leftover turkey, vegetables and tortellini.
Ingredients:
8 ounces uncooked cheese tortellini
2 tablespoons butter
1 cup chopped onion
1 large carrot, peeled and thinly sliced
2 cans (14.5 ounce) cans chicken broth
1 can (28 ounce) tomatoes with basil, garlic and oregano, undrained
1 tablespoon chopped fresh basil
1 teaspoon sugar
1 teaspoon salt
1/8 teaspoon ground white or black pepper
2 cups leftover chopped cooked turkey
Directions:
Prepare tortellini according to instructions on box or package.
Melt butter in large saucepan on medium heat.  Add onion and carrot.  Cook and stir for about 7 minutes or until vegetables are tender.
Stir in broth, undrained tomatoes, basil, sugar, salt and pepper.  Bring to a boil on medium high heat, stirring occasionally. Reduce heat to medium and simmer uncovered for 10 minutes.
Stir in tortellini and turkey.  Cook until heated through.
Servings : 6   Prep Time:  10 minutes   Cook:  10-20 minutes
