Beat the winter blahs with this delicious easy to make these oatmeal breakfast cookies that I guarantee will bring smiles. I get over ambitious when buying bananas for the week and usually end up with a couple that will start to brown before we can eat them. This is delicious and easy way to use them in a recipe that I guarantee you will enjoy.
Let's get started. Preheat your oven to 350 degrees. To begin mash 3 large ripe bananas in a bowl. I used my mixer but you can mash with two forks if it's easier. Add 1/4 cup chocolate chips and 1/4 cup applesauce. Add in 1 3/4 cups QUICK oats and mix with a large spoon until blended. Using an ice cream scoop, drop onto a baking sheet lined with parchment paper. Press gently with your palm or bottom of a glass to slightly flatten and bake for 15-20 minutes. Check after 15 to make sure they don't burn. Cool and enjoy. If you like them a little sweeter, drizzle honey on top right out of the oven.
