Mom's Recipe for Fall Cookies

When the calendar says Fall, my pumpkin game is on. It's my favorite season for so many reasons. The gorgeous colors of the trees, the apples and pumpkins, and fall baking.  I'm proudly sharing my Mom's pumpkin chocolate chip cookie recipe. I still remember the first time she made these and they have been my favorite cookie for Fall ever since. 

You will blend the following together in a bowl, scoop with an ice cream scoop onto parchment lined baking sheets a couple of inches apart and bake at 350 for 20 minutes.  It fills your home with the best aroma while baking.

Assemble and mix the following:

4 cups unsifted all purpose flour
2 cups quick or old fashioned oats, uncooked
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups softened butter
2 cups firmly packed brown sugar
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 can solid pumpkin puree
1 cup semi sweet morsels

Special Deliveries from the Heart (just a gentle story and a smile)


MOMS CHICKEN SOUP

My 25 year old soup pot is special to me.  I use it to make all of my soups and stews.  It has been used, washed and scrubbed hundreds of times.  When I bring it out, I never fail to think of the meals I've made for my family and friends in my special pot. This week was no different.  With 2 family households having someone recovering from a recent surgery and another family member battling a winter cold, I thought it was a good time for a large pot of homemade chicken soup to share.  I only use my Mom's recipe and every time my soup slow cooks on the stove all afternoon, it reminds me of how our home smelled when I was growing up when Mom would make her chicken soup.  While my soup cooked on this particular day, I made hot biscuits and chocolate chip cookies as a special treat to go with my soup deliveries. When everything was done, I packaged the soup in containers, bagged them with the biscuits and cookies and away I went to make my deliveries.  My heart was full knowing my moms soup and I were able to bring some joy and comfort to many I love and care about.

Special Recipe from Mom


One of the most loving and special gifts my Mom ever gave me was this recipe box as a newlywed. The lid has since come off and a few of the recipes are slightly stained with food I have made over the years.  I feel this adds to the charm of this great gift! Mom took the time to type all of the recipes she had made as I was growing up and gave it to me before my husband and I married. This wasn't an easy task since I was the first to get married of 5 children and her days were so full with taking care of all of us, our Dad and running our home.  She also balanced bookkeeping for the company she and my Dad owned. I wish she could see that 43 years later, I'm still not just using it but I cherish each and every recipe she so lovingly typed out for me.  My husband and I hosted a holiday dinner recently and had a nice ham bone left from our spiral ham.  So I thought I would make a big batch of vegetable soup. The next day, I placed it in my dutch oven along with the ingredients on Mom's vegetable soup recipe and let it simmer most of the afternoon on low.  This is a great meal chock full of vegetables and it tastes so delicious.  Follow the recipe below and serve it with crusty rolls on the side for dipping in the soup! (Check out a couple of extra things I added of my mine at the bottom of the page).




I substituted "chicken" stock for the bouillion cubes and used bowtie pasta in place of the potatoes.  I also added 1 can diced tomatoes and a can of tomato sauce instead of the tomato soup.
