Easy Like Sunday Morning

Happy weekend friends! It's a snowy one here in the Midwest. Winter so far has been on the warm side with very little snow. Until today that is. On snow days, I'm happy being in the kitchen creating comfort dishes. I wanted to share a simple and delicious recipe I've been making for scrambled eggs. The fun part is tossing all of the ingredients into the blender to blend before adding to the pan. They are creamy, fluffy and honestly delicious. 
Give it a try this weekend. Great for "brinner" too if you need a dinner quick and easy.

Ingredients:
12 large cracked eggs
1 cup half and half
6 ounces softened and cubed cream cheese
3/4 teaspoon salt
1/4 teaspoon pepper

Toss everything in a blender, and blend until it's frothy.
Spray a large skillet with non stick spray and heat 1/4 stick butter.
Add egg mixture and turn heat to medium/low. Let is cook until the bottom begins to set.
Using a spatula, stir gently until eggs are thickened and cooked through.
Serve it with your favorite side. Bacon, sausage, toast, english muffin, bagel, fresh fruit and enjoy.

Slow Cook Oatmeal Bar for Easy Breakfast - Kids Love it!

  Customizing oatmeal is a fun and easy way to offer your family a healthy breakfast they will like before work or school.  This is a real time saver and I like customizing to your own tastes.  It's a simple slow cooker oatmeal you can put on the night before and wake up to a hot and hearty breakfast. Before you head to bed, grab your slow cooker and coat the inside with butter to keep the oatmeal from sticking.  Add the following:
8 1/2 cups water, 2 cups steel cut oats, 1 3/4 cups whole milk OR 1 (14 ounce) can unsweetened coconut milk, 1/4 cup packed light brown sugar, 1/2 teaspoon salt
Cover and cook on LOW until the oats are cooked through and creamy.  About 7-8 hours.  Stir in the vanilla and serve Immediately.

Set out bowls, spoons, and the following toppings in bowls so everyone can dish out the oatmeal and top it with their favorites  

Dried cherries, dried apples, cinnamon, blueberries, brown sugar, coconut, sliced bananas, pineapple chunks, sliced peaches or strawberries and don't forget the maple syrup, butter and milk for creaminess.

Easy Weekend Breakfast when Hosting Guests




Thanksgiving is around the corner and many of us will be hosting family and friends in our homes.
When having overnight guests, simplicity and efficiency are key ingredients.  This applies as well to your own family to allow you time to enjoy the weekend.    Create a Grab and Go Station so your guests can wake up on their own schedule and create a breakfast to their liking.  I love using apothecary jars and baskets for storage and presentation.  Use them to store and present dried fruit, granola, cereal, sugar and sugar substitutes.    Customize the breakfast selection for your family or friends.  If you have young children in your group, pop tarts, juice boxes and individual packages of donuts are popular choices.  Adults prefer fresh fruit, muffins, croissants, granola bars, breads, bagels, cream cheese, cereal and yogurts.   Set up the toaster nearby for easy toasting.  An assortment of jams and jellies go well with butter. Set your bowls and plates nearby but if your budget allows, paper bowls and plates are perfectly acceptable too. 
Have a coffee area where you have the coffee pot ready to plug in and brew.  I have a keurig coffee maker in both of our homes, allowing each individual to make their own fresh cup of coffee with the coffee of their choice.  And I have a french press to brew freshly ground coffee for a special treat. A  small basket with a variety of Kcups for the Keurig maker and a tray holding coffee mugs, creamers, stirrers and sugar is all you need for a coffee house experience at home.

Easy make your own breakfast this weekend

Set up a self serve "make your own yogurt " bar for overnight guests this weekend.
Simply set out bowls, spoons, fruits and individual bags of granola for a quick breakfast so you can get out and enjoy the day. 

1)  Choose your yogurt (Greek or non Greek). 
Plain, vanilla, strawberry, peach, blueberry
What's your favorite?

2)  Blend with any or all of the following: Pineapple chunks, halved strawberries, blueberries

3)  Top with:  Banana slices, dried cranberries,  coconut flakes, and/or cinnamon

4)  Sprinkle and mix in your granola. Our favorite is udisgranola. Check it out in cranberry, vanilla, original or Au Naturel.  And it is all Gluten Free!!...

Easy Crock Pot French Toast

I was searching for an easy brunch main dish for the coming weekend that I could do in the crock pot to free up my time to enjoy my family and friends.  The ingredients for this recipe are so simple you might already have them in your kitchen.

1/2 loaf of cinnamon raisin bread or a challah bread
6 eggs
2 cups milk
1 teaspoon cinnamon
1 tablespoon light brown sugar
1 teaspoon vanilla

Break up the bread in half pieces and place in the crock pot.  Whisk the eggs, milk, cinnamon, brown sugar and vanilla together in a bowl.  Pour over the bread in the crock pot.  Set the crock pot to low setting for 6 hours.  Remove the lid about 15 minutes before it's done and it will brown and toast.  
Serve with warm maple syrup and enjoy!  Serving 4 "hungry" guests.
