Slow Cook Pulled Pork with Applesauce




I love this recipe because it's so delicious, easy, & low fat. This will give you 12 servings and prep time is only 30 minutes. It's a favorite weekend go to of mine. 

Ingredients:
3 lb. pork roast
4 cups unsweetened applesauce
18 oz. bottle of your favorite barbecue sauce

Place the pork roast in the slow cooker.

            Spread the applesauce over the top of the roast.

             Spoon the barbecue sauce over the top carefully.

Cover and cook on low 6-8 hours or until the roast is tender.

Remove from the slow cooker and place on a platter. Pull apart with two forks until shredded.
Place the shredded pork in a bowl and spoon some of the sauce from the slow cooker over the top.
Serve on multi grain or wheat buns with a healthy side of your choice.

Summer Supper Vibes

~Chicken & Pineapple Barbecue Pizza~

I made a delicious dish tonight for our summer al fresco dining using leftover rotisserie chicken from last night's dinner. It's easy to put together and perfectly pairs with a nice Chianti.


Use a store bought thin crust from your grocery store for a shortcut. They usually come in packages of 2. One crust feeds 2 people or yields 6 generous slices. Shred either baked or rotisserie chicken for your topping.


I like sweet honey barbecue sauce for this pizza instead of pizza sauce. The sweet offsets the earthy and tart flavor of the goat cheese. Slice the goat cheese and cut the pineapple chunks into thirds.
Spray a pizza pan with non stick cooking spray, place the crust on the sheet. Brush a thin layer of barbecue sauce on the crust making sure you brush it to the ends.  Cover the crust with the shredded chicken, then pineapple topped with goat cheese.



Bake in a preheated oven of 400 for 15-18 minutes, slice and enjoy.

Slow Cooker Barbecued Short Ribs - Sweet, gooey and fun!

 I love short ribs that fall off the bone.  Particularly when the prep time is short!  I can pop them in my slow cooker and enjoy them with my family at the end of the day. This recipe is so easy and tastes like you worked on it all day.  

These ingredients will make 6 servings. Modify to your needs.

1/2 cups water (you can substitute beer for the water), 1 1/2 cups ketchup, 1 1/2 (6 ounce) cans tomato paste, 1 cup and 2 tablespoons brown sugar, 3/4 cups vinegar, 3 tablespoons prepared mustard, 1 tablespoon and 1 1/2 teaspoons salt, 3 pounds beef short ribs, 1/4 cup honey.

Season the ribs with salt and pepper first and brown lightly in pan to caramelize your meat.  This step really seals the flavor during the cooking process. 

Mix the water, ketchup, tomato paste, brown sugar , vinegar, mustard and salt in a slow cooker, stirring to dissolve brown sugar and salt.

Place the short ribs into the sauce and stir to coat.  Cook covered on low for 8 hours.  I love this dish served on hot buttered cooked noodles.  I hope you enjoy them like we do!

Awesome Pulled Chicken in your Slow Cooker Tonight

Apple BBQ Pulled Chicken Sandwiches with Apple Slaw (Serves 4)

It's Tuesday and we are just getting in to the week.  The slow cooker is your friend when you don't have hours to spend in the kitchen.
This dish is on the menu for our pumpkin patch weekend.  I'll set up the slow cooker in the morning and the house will smell amazing when we return.  
This sandwich is delicious when you side it with sweet potato fries.  Store bought or I like to make my own.  Simply wash and slice thinly sweet potatoes.  Place on a baking sheet gently sprayed with cooking spray, and drizzle olive oil over the sweet slices.  Sprinkle with sea salt and pop into the oven
at 350 for 20-30 minutes or until tender and golden brown.  Turn halfway through.  I can't wait! 

Place the following in the slow cooker and cook on low for 6-8 hours.  Shred the chicken with 2 forks. Serve on buns and top with Apple Slaw.  
1 lb. boneless skinless chicken thighs or breasts, 2 large apples, peeled and cut into small pieces, small sliced onion, 4 slices cooked and crumbled bacon, 1 cup BBQ sauce. 

~Apple Slaw~
Slaw - 2 apples, julienned, 2 cups cabbage finely shredded, 1 carrot, julienned, 2 green onions, sliced thin (optional)

~Creamy Maple Dijon Dressing~
3 tablespoons Greek yogurt, 2 tablespoons apple cider vinegar, 2 teaspoons maple syrup, 2 teaspoons Dijon mustard, salt and pepper to taste (can add small clove minced garlic if desired)
Mix the apples, cabbage, carrot and green onion and toss in the mixture of the yogurt, cider vinegar, maple syrup, Dijon mustard, garlic, salt and pepper.
