Easy Beef Stew like Mom Used to Make

Super Easy. Super Delicious. Good for the soul hearty beef stew just like Mom used to make.  Okay, Mom did make it and I modified to shorten prep time, yet providing hours of filling your home with an aroma reminding you of Mom's cooking.  Here's all you need to be on your way to dinner tonight.
Cut up beef stew cubes, can of Campbells tomato soup, tomato juice, can of chopped tomatoes, small unpeeled yellow potatoes, chopped carrots, onion salt, salt, pepper, and my spice of choice for this meal are The Spice House White Onion and Back of the Yards.  Back of the yards is an awesome blend of freshly ground Tellicherry pepper (also a favorite of mine), pepper, garlic, salt, sugar, shallots, bell peppers and parsley. Magic in a jar!  Toss everything together in a 13 x 9 baking dish, bake on 350 for 3 hours. 

Inhale, serve and enjoy!

Easy Slow Cooker Beef Stew







I love meals I can throw together quickly in the morning in the crockpot, turn it on, go about my day and have a delicious dinner in the evening for my family.  This beef stew is so easy and takes just a few minutes to assemble.

Beef stew cubes, 1 can www.campbells.com tomato soup, 32 oz. bottle tomato juice (you can substitute 2 small cans v-8 for a little extra flavor and spice), chopped onion, baby carrots, and peeled and quartered potatoes. Salt and pepper to your liking.  Cover and set it on low for 8 hours.  It's that easy.  Dinner is served!

Super Simple Slow Cook Beef Stew










When the temperatures turn cooler outside, I like the aroma of dinner cooking inside.  I literally put this beef stew together in my crock pot last weekend in ten minutes and let it cook on low all day long.  I brought the ingredients up to our lake cabin with the intention of having a nice meal that didn't require time or work.

Ingredients are beef stew meat, chopped carrots, halved small potatoes, 1 onion chopped, small can Campbell's tomato soup,  32 oz. bottle tomato juice, salt and pepper.

Place the stew meat on the bottom on the slow cooker.  Place potatoes on top of meat.  Top with carrots, onion, undiluted tomato soup, tomato juice, salt and pepper to flavor to your liking, cover, cook on low 8-10 hours.  Delicious and easy.  I made a side of corn bread (I used a mix to save time).  It went really well with the beef stew and can be made the day before to save time.  This stew recipe tastes even better on the second day:)  Win win!  Happy Tuesday.
