Pumpkin Latte Bites

Are you a coffee lover? Do you know a coffee lover? Whether these are for you to enjoy or you make them to share with a friend, you will love this recipe. Pumpkin recipe month continues on the blog and this is a new favorite from my kitchen. I gave one to my husband to try and he said "these are delicious. creamy and restaurant quality". They're full of healthy ingredients and easy to make. The recipe is from the Once Upon a Pumpkin by author Maggie Michalczyk, RDN. I used a mini food processor for the first step but a blender could work to pulse ingredients too. 

I hope you enjoy them as much as we are. 

Ingredients: 1/3 cup plain or vanilla (I used vanilla) greek yogurt
1/2 cup pumpkin puree
1/4 cup shredded coconut
10 pitted dates
2 teaspoons pumpkin pie spice
2 teaspoons espresso powder
Splash of vanilla & a pinch of nutmeg

Combine yogurt, pumpkin puree, dates and coconut into food processor and pulse for one minute.
Add vanilla, pumpkin spice, espresso powder and nutmeg and pulse couple more minutes.
Roll into balls and place "extra" coconut flakes and espresso powder in small bowl.
Roll balls through coconut and espresso mixture, place on a baking sheet and refrigerate until ready to enjoy. Can keep in fridge for a week or longer in the freezer.
