Grilled Sweet Potato Wedges
If you love sweet potatoes as much as I do, here's a new way to enjoy them tonight. They taste awesome on so many levels. This dish can be made on the grill in about 12-15 minutes, takes a short time to prepare and it's super healthy.
Ingredients:
3 tablespoons lime juice
3 tablespoons white wine vinegar
2 tablespoons honey
3 tablespoons fresh cilantro, minced
2 tablespoons mined shallot
1/4 teaspoon ground black pepper
1 1/2 pounds sweet potatoes (1 large or 2 medium) , sliced lengthwise in 1/2 inch thick slices
While the grill is heating for medium heat cooking, whisk together lime juice, vinegar, honey, cilantro, shallot and pepper in a small bowl until blended.
Brush the sweet potatoes on both sides with dressing. Place sweet potatoes on the grill and cook, covered about 6 minutes on each side or until tender and slightly charred. Keep an eye on the potatoes to avoid burning. This recipe can also be made in the oven. Spray your baking sheet with cooking spray and place the sliced potatoes on the baking sheet. Bake at 425 for about 30-40 minutes or until done.
Serve, sliced in strips and drizzle with remaining ingredients (Serves 4)
