Spinach Tomato Orzo Soup

I love soups that are easy and can be easily modified for either a couple of servings or feeding a large group. This soup is full of nutrients and delicious on a chilly Fall or Winter day.
Ingredients:
1 large onion, chopped
1-2 cloves garlic, chopped
1 pound spinach, fresh or frozen (defrosted)
chopped carrots and celery
2 -15 ounce cans diced Italian tomatoes with oregano and basil
1 pound package orzo pasta
2 quarts chicken or vegetable stock
2 quarts water
Olive oil
Drizzle olive oil in a large soup pot, add onions and saute until tender. Add garlic and saute for 2-3 minutes. Add canned tomatoes, spinach, chicken or vegetable stock and water. Bring to a boil and reduce heat to medium. Add orzo pasta and cook for 12-15 minutes or until orzo is tender.
To create an "Italian Wedding Soup" tasting soup, add 1 pound of cooked hamburger to soup when you add spinach and canned tomatoes. Serve with a warm loaf of sourdough or french bread and Enjoy!
** THIS SOUP CAN BE FROZEN. PLEASE DO NOT FREEZE WITH THE PASTA ADDED. COOK THE ORZO PASTA SEPARATELY AND ADD TO SOUP AFTER DEFROSTING IF YOU CHOOSE TO COOK AND FREEZE FOR USE AT A LATER DATE.
