Mediterranean Grilled Chicken and Grape Skewers







Don't these look delicious? Here's another Grill Tuesday meal idea you will love.  It does require marinade time but it's worth the wait.  This recipe below will make 4 servings.  

Ingredients are: 1/4 cup extra virgin olive oil, 2 minced cloves of garlic, 1/2 teaspoon red chili flakes, crushed, 1 tablespoon minced oregano, 1 tablespoon minced rosemary, 1 teaspoon lemon zest, 1 lb. white boneless and skinless chicken breast, 1 1/3-2 cups green seedless grapes taken off stems and rinsed,  1/2 teaspoon salt, 1 tablespoon lemon juice, 2 additional tablespoons extra virgin olive oil and 12 skewers for grilling.

Metal is easy to use but will remain hot and hard to pick up after grilling.
Wooden skewers will char a bit on the ends while grilling.  Soak them in water for 30 minutes before you thread your chicken and grapes onto them.

Day before in a small bowl, combine 1/4 cup olive oil, garlic, chili flakes, oregano, rosemary and lemon zest.  
Cut the chicken into 3/4 inch cubes and thread onto 12 skewers alternating the chicken and grapes.

Place the skewers into a baking dish or pan.  Pour the marinade over them, and be sure to coat each one.  Marinate in the refrigerator up to 24 hours but no less than 4 hours.

Fire up the grill.  Be sure to spray cooking spray on the grill grid before placing the skewers on them. 
**IMPORTANT! SPRAY GRID BEFORE YOU FIRE UP THE GRILL, NOT AFTER THERE IS A FLAME.

Grill and turn until the chicken is cooked through.  Check it after 5 minutes on each side.  

Arrange the skewers on a serving platter and drizzle with olive oil and lemon juice before you serve.  

Serve it up with this easy salad I love to serve.  Your favorite greens, crumbled feta cheese, glazed walnuts, and dried cherries or cranberries.  When fruit is in season, substitute fresh blueberries and strawberries.
