Grilled burgers with bacon and eggs have been around for a while, but Rachael Ray has an awesome recipe perfect for brunch, lunch or dinner. Can't guarantee it is low fat, but I can guarantee the flavor is one you will want more of. The recipe suggests grilling the patties in a cast iron skillet on the stove top, but you can certainly grill them as well. Here is the recipe for cast iron cooking.
Ingredients:
1/2 lb. thick bacon, 1/4 dark amber maple syrup, 1 1/2 lbs. ground beef chuck, 3 tablespoons worcestershire sauce, 3 tablespoons grated onion, 2 tablespoons dijon mustard, salt & pepper, extra virgin olive oil, 1/2 lb. sliced extra sharp cheddar cheese (for topping), melted butter for basting eggs and toasting burger buns, 4 eggs, 4 split burger buns.
Preheat the oven to 400 degrees. Bake the bacon on a baking sheet or aluminum pan lined with foil for about 15 minutes. Baste the bacon with maple syrup and bake until crisp.
Heat a cast iron skillet over medium high heat. In a bowl, combine the beef, worcestershire sauce and onion. Stir in the mustard and season with salt and lots of pepper. Form into 4 patties. Drizle the patties with oil, cook, flipping once, until a nice crust forms, about 7 minutes. Top with cheese and cook for 2 minutes longer or until the cheese melts.
Brush a nonstick skillet over medium heat with some melted butter. Add the eggs and fry to your liking, season with salt and pepper.
Toast the buns for couple of minutes in oven and baste with melted butter. Top the bun bottoms with the burgers, bacon, eggs and bun tops.
Serve up with fresh corn on the cob and you have Awesome! Enjoy.
