My family recently sat down to dinner when it became apparent our daughter was feeling overwhelmed by a chaotic day. No surprise considering she has 2 businesses, is planning her wedding and has just purchased her first home with her husband to be. Within an hour of beef stew, buttermilk biscuits, salad and a glass of Pinot Noir, we were telling funny stories and laughing. The time spent as a family to reconnect is as important as the air you breath. When our children were growing up, Sunday was always our "family day". School, friends, sports and jobs always seemed to take over our everyday lives, but we made it a priority to make time to reconnect when we could at dinner time and on Sunday. It doesn't always have to be a home made meal, but the simple act of being together can change the course of the way your day is going. Here is a simple and easy meal idea for your next family gathering that I hope you enjoy. We love tomato soup and grilled cheese so why not make grilled cheese croutons to top off your soup and have your comfort food all in one dish?!
I suggest Campbell's Tomato Soup made with milk as directions dictate on the can. Delicious and ready in minutes. Next, make your favorite grilled cheese sandwich in a panini maker. If you don't have a panini maker, make your grilled cheese the old fashioned way of buttering the bread and grilling in a skillet on the stove. Either way works. When your sandwiches have browned, let them sit on a cutting board for a minute or so, and cut into 1 inch cubes. Place on top of your hot tomato soup and enjoy. A big plate of fresh brownies for dessert is always welcome ....
