Blue Cheese Compound for a Burger Topper



If you want to make a burger topping that's extra special with no fuss, make a blue cheese compound butter, refrigerate or freeze for a few hours.  Slice and place a pat or two on top of your burgers.  Delicious!

Compound butter is typically butter rolled into cylinder shape and chilled.  Take a large bowl, 4 sticks (1 lb.) softened butter, and 6 ounces crumbled blue cheese.
You can cream the mixture together with the paddle attachment of your stand mixer or blend well with your hands.  Spread it out on a large square of plastic wrap, place the butter in the middle. Roll into a cylinder inside the wrap, tie each end with a knot, and chill or freeze until needed.
