Birthday Pancake Breakfast

Are you celebrating a loved one's birthday soon?  Surprise them with a special breakfast the way my daughter surprised me on my birthday.  Decorate the table with birthday signs, balloons, and make stacks of these mini "birthday confetti" pancakes.  Top them with fresh sliced strawberries, whipped cream and don't forget the candle to make that special wish:)!

Our daughter is celebrating a special birthday.  It seems like yesterday she was a baby.  Every moment brings special memories. She is our daughter, sister and friend and more special and amazing than words can say.  Happy birthday with all of our love always!

~Recipe for birthday confetti pancakes ~


1 cup pancake mix (use your favorite brand), 1 cup yellow cake mix, 2 eggs, 1 teaspoon vanilla, 1 cup milk, 3 tablespoons rainbow sprinkles

Place all ingredients in a bowl and whisk until blended.  The batter may be lumpy. 

Heat a well oiled griddle over medium high heat.  Scoop the batter onto the griddle. (I use an ice cream scoop for this step.  Makes just the right size).  Cook until pancakes are golden brown on both sides.  Serve hot.
We love sliced strawberries and blueberries with whipped cream to top off our birthday pancakes.
