Merry Minestrone (Slow Cooker Style)

With Christmas Eve weeks away, organization and planning is key for smooth sailing into the Christmas holiday.  One of my favorite soups is Minestrone and this recipe is quick, healthy, tasty and hearty.  What more can we ask?  Grab your slow cooker and let' get started. Combine all of the following into the slow cooker, stir well and cover.  Cook on low 10-12 hours or high 4-5 hours.

3 cups water, 1 1/2 pounds stew meat, cut into bite size pieces, 1 diced medium onion, 6 sliced carrots, 14 1/2 ounce can tomatoes, 2 teaspoons salt, 10 ounce package frozen mixed vegetables, 1 tablepoon dried basil, 1/2 cup dried oregano

When ready to serve, ladle into individual bowls and top with grated Parmesan cheese.  Serve with hot, crusty rolls and enjoy.
