Labor Day Weekend

Summer has flown by and Labor Day weekend is coming up quickly.  Will have family and friends spending a few days with us.  It makes me smile when we have a full house!  Brings so much life...and at times just a bit of chaos.  We always hope for sunshine but try to have a plan B if the weather doesn't cooperate.  

My griddle, waffle maker, freezer zip lock bags and 13x9 foil pans are a must for my kitchen!  Fast and easy breakfast choices that can be made ahead of time are pancakes and waffles. No problem if no time to make up ahead of time.  Can be made and on the table in 15 minutes if you make fresh that morning. We enjoy them with fresh blueberries and who doesn't love real maple syrup or whipped cream?!  

Maple bacon is another favorite of mine, though always keep turkey bacon or turkey sausage on hand for a healthier option.  
Line a couple of 13x9 foil pans with aluminum foil, spray lightly with Pam or cooking spray of your choice and lay your bacon strips side by side.  Bake in a preheated 375 oven for an hour or until crispy, drain (very carefully) hot grease into a container and dispose of when cooled.  Blot your bacon with paper towels and place in a freezer zip lock bag for future use.  Great for egg casseroles or BLT's and saves time and mess clean up when you want to spend time with your family.  
Here's my favorite egg casserole recipe that is my Grandma's recipe!  Super easy and the best part is you make the night before and stick in the oven when you wake up!  Makes house smell amazing!!
You need the following:

8 - 10 slices bread, 8 eggs, 2 1/2 cups milk, 1/2 lb. velveeta cheese cubed, 3/4 tsp. dry mustard, 3/4 tsp. salt, 5-6 slices cooked and crumbled bacon.  
Spray a 13 x 9 pan with cooking spray and cube your bread into bottom of the pan.  Beat your eggs, milk, mustard and salt together in a bowl and pour over the bread.  Add bacon and cheese on top and cover with foil and refrigerate until morning.  Uncover and bake at 300 for one hour and cut into squares and serve!!

 It's THAT EASY!
